Crustless Chocolate Cheesecake with Toasted Coconut

Things you may or may not know about me:

  1. I love cheesecake.
  2. I love chocolate.
  3. I love coconut.

One day I thought to myself, is it possible to create a dish using cream cheese, chocolate and coconut?

Furthermore… is it possible to create aĀ healthy, low-calorie, diet-friendlyĀ dish with these ingredients?

The answer is yes, and YES!

Enter CCCTC, a.k.a. crustless chocolate cheesecake with toasted coconut! To make this delicious dessert, start with my trusted Dukan cheesecake recipe.

Modifications:

  1. Omit the crust.
  2. Add two tablespoons of cocoa powder to the batter.
  3. While cheesecake is baking, toast six tablespoons of unsweetened shredded coconut.
  4. When the cheesecake is slightly firm, evenly spread toasted coconut on top and continue baking.
  5. Increase the total baking time by ten minutes.

Who says you can’t have your cake and eat it too? šŸ˜‰

Say Cheesecake!

Pure protein week – Day 6:

Hopefully, my pure protein meals over the last five days have given you some ideas on how to incorporate more protein into your diet. If you missed this week’s posts, click here: Monday, Tuesday, Wednesday, Thursday, and Friday.

Do you know what time it is?

Dessert time! šŸ˜‰

A common misconception is that dessert is unhealthy. I understand why people come to this conclusion because let’s face it – desserts are usually laden with processed sugars and unhealthy fats. And the desserts that areĀ healthy often taste nothing like the real deal. Can dessert ever be healthy and delicious?

The answer is yes, Yes, and YES! Today and tomorrow, I will be sharing two of my favourite healthy desserts with you, starting with a healthified version of cheesecake!

Welcome… mini cheesecake bites! These are made using my greek yogurt cheesecake recipe. Instead of baking it in a 9×9 inch pan, use a 24-cup mini muffin pan. Press the oat bran crust up against the sides and bottom of the muffin wells, forming cups. Bake the crust for 10 minutes at 350Ā°F before filling and baking again.

Each of these babies containĀ 4g of carbs, 1g of fat, 3g of protein, and only costs you 36 calories.

Life just got a lot sweeter. You’re welcome šŸ™‚
