Seriously, what is not to love?

I love eating avocado on toast, pizzas, in soups, salads, burgers, as avocado fries, and of course… guacamole!

  1. Mash one ripe avocado.
  2. Dice one large tomato or two medium-sized tomatoes.
  3. Dice a quarter of a small onion.
  4. Combine onions, tomatoes, and mashed avocado.
  5. Add a dash of salt and a few squirts of lime.
  6. Bon appétit!

Are avocados a fruit or vegetable? Comment below if you know!

Doing the Tango with Mango in Durango

Durango is legit, and mangoes can tango. Who knew?

But I think we all know that summer = one long ice cream eating fest. (at least for me anyways)

I used to be a die-hard vanilla fan.Then, I found coconut.And then, I fell in love with cookie dough.(Wait, there’s more!) But, I also loved coffee.And let’s not forget… strawberries and cream.Cookies and cream.Blueberry cheesecake.Okay. In a nutshell, I –

Oh wait, I forgot. Maple walnut.As I was saying…

In a nutshell, I don’t think there is an ice cream flavour that I don’t like.

Recently, however, I met mango.  ❤ It’s official. We’re a thing.

What is your favourite ice cream flavour?

You Can Be the Peanut Butter to My Jelly

You can be the peanut butter to my jelly
You can be the butterflies I feel in my belly
You can be the captain and I can be your first mate
You can be the chills that I feel on our first date

You can be the hero and I can be your side kick
You can be the tear that I cry if we ever split
You can be the rain from the cloud when it’s stormin’
Or you can be the sun when it shines in the mornin’

Don’t know if I could ever be
Without you cause boy you complete me
And in time I know that we’ll both see
That we’re all we need

Cause you’re the apple to my pie
You’re the straw to my berry
You’re the smoke to my high
And you’re the one I wanna marry

Cause you’re the one for me
And I’m the one for you
You take the both of us
And we’re the perfect two

We’re the perfect two
We’re the perfect two
Baby me and you
We’re the perfect two

You can be the prince and I can be your princess
You can be the sweet tooth I can be the dentist
You can be the shoes and I can be the laces
You can be the heart that I spill on the pages

You can be the Vodka and I can be the chaser
You can be the pencil and I can be the paper
You can be as cold as the winter weather
But I don’t care as long as we’re together

You know that I’ll never doubt ya
And you know that I think about ya
And you know I can’t live without ya

I love the way that you smile
And maybe in just a while
I can see me walk down the aisle

We’re the perfect two
We’re the perfect two
Baby me and you
We’re the perfect two
We’re the perfect two

Peanut butter + jelly = the proper way to start off a week

Who Doesn’t Love Pizza?

I honestly have never met anyone who dislikes pizza. #truefact

Pizza is simply too goddamn delicious. 😀

I wouldn’t call myself a pizza-obsessive. (This guy is the definition of that.) But, I do love a good slice from time to time. And then… I discovered tortilla pizzas, a.k.a. pizzas made with a tortilla base. They are like a healthified version of a thin-crust pizza – low in calories, loaded with veggies, high in fiber, and SO freaking delicious. Needless to say, I have been making them very frequently. Whole grain tortilla + 2 tablespoons garlic BBQ sauce + 3 slices black forest ham + a handful of button mushrooms + 2 wedges Laughing Cow cheese = one insanely delicious tortilla pizza

Feel free to change the sauce, vegetables, protein, and cheese to your liking; the options are endless!

What are your favourite pizza toppings?

Chocolate Fudge Brownies

Hola.

Do you ever feel like having just one brownie/cookie/slice of pie/dessert?

I do. All the time.

If you tapped into my head, this is what you would hear:

Damn it, Jessica! You don’t need to bake a whole batch of brownies!

Why not? Homemade brownies are a million times better than store-bought.

Yeah, but what are you going to do with all those brownies?

I’ll eat them! Wait no… not all of them! I’ll… uh… give them to my family!

Yeah right…

Okay, fine… maybe not. But still, it’s not a sin to indulge in brownies once a while!

I know! You can buy some Fiber One brownies – the ones that come in a box of five.

Hmm… well, I’ve never had them before. Sure, I’ll give them a try! But what if they aren’t as good as I expected them to be? I don’t want to be disappointed.

Well, you will never know until you try.

Ugh, fine. I’ll try the Fiber One brownies this time.

And so, I ended up buying a box of Chocolatey Fudge Fiber One brownies. (I’ve seen other stores carry a different version of the same thing called “Chocolate Fudge”; the packaging is different and the brownies are slightly lower in calories.)I generally like stuff by Fiber One. Granola bars, not so much. But their cereal is really good.

These brownies weren’t all that bad. But they weren’t all that good either.

Pros:

  • Low in calories (110 or 90 depending on which version you buy)
  • High in fiber (5g)
  • Chocolatey
  • Chewy
  • Soft
  • Chocolate chips imbedded in the brownie added a nice texture
  • Perfect for when you don’t want to bake a huge batch of brownies.

Cons:

  • Too small, too thin.
  • High in sugar (9g)

Overall, I’d rate these 3.5 stars out of 5.What are your thoughts on Fiber One brownies?
