Coconuts.

Lately, I’ve been obsessed with coconut. Shredded coconut. Coconut oil. Coconut butter. Coconut water. Coconut milk… the list goes on. It has a subtle sweetness and nuttiness to it that enhances the flavour of any dish.

I’ve been sprinkling shredded coconut on my oatmeal, baking macaroons, marinating chicken in coconut milk, drinking coconut water after workouts, and sautéing vegetables in coconut oil. It is so versatile! – not to mention delicious!
